In the absence of any halal pizza place in Cardiff...I make my own.

Get the chicken, cook it in spices, and add mushrooms, red onions, sweetcorn, tuna and pineapple.

Takes a while but its worth it.

I do this desert...

Belgian waffles (warmed)...
with good vanilla ice-cream sitting on top of the waffles...
with melted chocolate swirled on top....

I think I shall post a pic of my 'dish of the day' seeing as I cook for myself these days.

Tomorrow, I am making red peppers stuffed with chicken mince, served with baby potatoes roasted in herbs and olive oil.

Cereal ain't enough, you're supposed to drink 3-4 glasses of milk daily. Drink skim milk if you can't swallow the whole one.

Peppers are very tough on the outside, so I will cook them in the oven for about 30 mins, then add to the keema in the pan for about 15-20 mins....45 mins approx.

Cooking is so theraputic. My wife (when she is here!!!) cooks Sun-Thurs, ...and I cook on the weekends.

Washing up also very soothing. I recommend it.
